Continuing the food theme for my Falling into Fitness Series, I decided to do a really easy meal prep idea. It took me less than 30 minutes and tastes really good. It was really filling too so it works well for those busy weeks when you don't have time to cook.
What You'll need:
-2 Chicken Breasts (Tofu works just as well for vegetarians)
-Chili Powder/ Red Chili Flakes
The first thing I did was defrost the chicken breasts and cut them into relatively square pieces. For the rest of the veggies I got about 1/3 cup of the rest of them and cut them into similar sized pieces and lined everything up in my pan.
Then, I drizzled olive oil over everything and seasoned with the Italian seasoning and Paprika and put a dash of Chili powder over everything.
Ready to pop in the oven!
While it was baking I put some Quinoa to boil on the stove for a serving of carbohydrates along with it, but you could mix and match this with a lot of different healthy carbs for a different option.
It was super fast and ready in about 20 minutes! Chicken came out delicious, and the food was enough servings for about 4-5 days.
(P.S. One thing I didn't put in mine was red onions, I didn't have any with me but it goes beautifully with it too. )
