This is my super simple, delicious and healthy taco fiesta bowl! It was really easy to make and is perfect for when I have those Taco Bell craving days!
1. 8 oz cooked Chicken Breast
2. 1 cup Black Beans
3. 1/2 cup avocado
4. 1 Cup mixed Bell Peppers
5. Brown Rice (I use half a bag of microwave brown rice, it's super convenient)
6. 1 tablespoon Taco seasoning
5. 1-2 Tablespoons cilantro, green onions, and cilantro to serve
(sub chicken with tofu or more black beans for extra protein)
Coat the skillet with olive oil and mix everything together until thoroughly cooked.
Squeeze some fresh lemon for flavor and serve with salsa. Let me know what you guys think and how it turned out! Thank you for the support as always!
